- Prepare 1 lb of cooked, shredded dark and white turkey.
- Prepare 1 lb of aundouille sausage.
- You need 1 medium of onion.
- It's 1/2 medium of bell pepper.
- You need 2 tbsp of minced garlic.
- Prepare 2 tbsp of flour.
- It's 2 tbsp of oil.
- Prepare 3 cup of chicken stock.
- You need 3 cup of beef stock.
- You need 1 bunch of cut okra.
- It's to taste of salt.
- You need to taste of cayenne.
- Prepare to taste of file'.
- You need 4 cup of cooked rice.
Can also use chicken or vegetable broth instead. Turkey, okra, sausage and prawns are simmered in a spicy tomato-based sauce. Serve this Cajun dish over steamed white or brown rice. Some people call gumbo the bouillabaisse of New Orleans, a link especially valid for seafood gumbo.
Turkey and sausage Gumbo instructions
- In a large heavy pot brown cut up sausage and then remove. You want to keep those good little burnt bits in the bottom of the pot for more flavor.
- In the same pot sautee' your onion, garlic, bellpepper in oil. Cook until wilted and add flour.
- Now cook on medium to low heat for about 5 - 7 minutes, stirring constantly.
- When your flour starts to brown add both stocks to the pot (you could use boullion and water if you like).
- Add salt and cayenne to your taste. There is salt in a lot of the ingredients already so be careful..
- Return the sausage to the pot and the turkey and bring to boil.
- Add the cut okra and let cook for about 30 minutes until okra is soft. Too long and the okra will get slimey.
- Put on rice.
- Sprinkle file'on prepared bowl of gumbo and serve.
