- Prepare of Okra - washed and cut (3 pieces per okra).
- You need 1 of Onion - medium diced.
- Prepare 2 of Tomato - medium.
- It's 2 of Green chillies - slit lengthwise.
- You need 1 tbsp of Ginger Paste -.
- It's 1 tbsp of Garlic Paste -.
- It's 1/4 tsp of Mustard Seeds -.
- You need 1/2 tsp of Cumin Seeds -.
- Prepare 1 of Bay leaf -.
- You need 3 of cloves -.
- It's 1/2 inch of Cardamom - stick.
- Prepare 1 tbsp of Garam Masala -.
- Prepare 1/2 tbsp of Coriander Powder -.
- You need 1/2 tbsp of Chilli Powder -.
- It's 1/4 cup of Coconut Cream -.
- You need to taste of Salt.

Okra Masala instructions
- In a sauce pan, add the mustard seeds to some heated oil.
- When it starts popping, add the cumin seeds, bay leaf, cloves, cardamom, green chillies and the ginger and garlic pastes.
- Give this 30secs and add the onions and sauté until the onions are soft.
- Add the masala powders and cook until the raw smell of the powders vanish.
- The okras and the tomatoes, some water and the required amount of salt and mix it well.
- The quantity of water will depend on how much sauce you want out of this.
- When the okras are cooked through - should take 15mins or so, add the coconut cream and let it cook for a few minutes.
- Serve hot with some rice or rotis.
