It is commonly prepared with vegetables like plantain flower, cluster beans, cabbage, french beans, broad beans etc.

Ingredients of Okra Paruppu Usili
- You need 300 gms of okra, cut into 1" thickness.
- Prepare 2 cups of leftover dal.
- You need 2 tbsp. of oil.
- You need 1tsp of mustard seeds.
- Prepare 1/2 tsp of cumin seeds.
- It's 1 of dry red chilli.
- You need 1 of green chilli.
- You need 1 sprig of curry leaves.
- It's 1 tbsp of chana dal (Bengal Gram).
- You need 1 tsp of split urad dal (black gram).
- You need to taste of salt.
- Prepare 1/2 tsp of turmeric powder.
- It's 1-2 tbsp of coriander leaves, chopped.
- You need 1 tsp of lime juice.
- It's 1 tbsp of fresh grated coconut.
It is one of our family's. Paruppu usili is a south Indian dish often made with green beans, but here I have tried it with Okra(Vendakkai), which is a rare combination I suppose, but still worth a try. - In a pan simmer the dal till dry and till it resembles bread crumbs. Keep aside..
- Heat oil in a pan and temper with mustard seeds, red chilli and cumin seeds. Allow it to splutter. Add the chana dal, urad dal, curry leaves and green chilies. Saute for a few seconds..
- Then add the okra, salt and turmeric powder. Mix well and cook, covered on a low flame till the okras turns soft..
- Now add the dried dal and lime juice and toss well..
- Garnish with coriander leaves and coconut. Serve as a side dish with rice or chapatis..
