- First wash the bhindis in running water then wipe them with a kitchen napkin and chop the bhindis into 1 inch pieces.cut the onion and saperate it's leaves.chop the tomato into cube/ square..
- Now chop 2 onions and tomato finely.keep aside..
- Now in a wok / pan heat oil, add chopped bhindis, saute them on a low to medium heat for about 4-5 mins or till the bhindis becomes slightly tender.take them out in a plate keep aside..
- In the same pan add onion petals and saute for a min, then add cubed tomato and saute for another min.take them out in a bowl.keep aside..
- Now in the same pan add cumin seeds and bay leaf saute well, add ginger and green chillies stir well, add finely chopped onion and saute till light golden..
- Add finely chopped tomato and salt.stir well and cook covered for a min on medium heat.or until tomato gets soft..
- Add a dry spices and stir well.add tomato puree and cook until oil comes to the surface..
- Add fresh curd and stir continuously till masala cooked well..
